DON PEPE NATURAL GEISHA 100%

COFFEE REVIEW MAGAZINE GAVE 96 POINTS OUT OF 100

We only have 100 lbs. of this precious and very hard to get from ACAP Auction.

Blind Assessment

Massively rich and intricate, this wine has minty dark chocolate, sandalwood, vanilla, narcissus-like flowers, and a pungent hint of ripe mango in aroma and cup. It has sweetly brisk acidity and a full, syrupy mouthfeel. Flowers, chocolate, and mango ring on in a resonant, richly drying finish.

Notes

First planted by Don Enrique Vasquez, who is said to have brought the celebrated Geisha (also spelled Gesha) variety to Panama from Costa Rica in 1898, these trees grow on the slopes of Volcan de Baru in Boquete at elevations between 5,000 and 5,700 feet. With its generally elongated beans and distinctive floral and crisp, often chocolaty, cup, the Geisha variety continues to be the world's unique coffees.

Don Pepe Estate Coffee is a family farm that has been dedicated uninterruptedly to coffee cultivation since 1898. Thus, it is the first company specializing in the coffee industry in the Republic of Panama.
Nowadays, the farm can produce different exotic varieties of grains, which have managed to surprise and delight all kinds of palates, making Don Pepe Estate Coffee one of the best in the world.
Our farm is strategically located in the foothills of Volcán Barú, specifically in the area of Volcancito (Boquete, Chiriquí), at an altitude of 1,500 to 2,000 meters above sea level. We have 70 hectares of land: 59 for coffee cultivation and 11 for natural reserve (Volcan Baru Park).

The high quality that Don Pepe Estate Coffee achieves is undoubtedly due to its valuable human capital, which pays excellent care in every supply chain procedure. Thanks to our traceability system, we have complied with the highest export standards, which has allowed us to obtain essential acceptance in prestigious international markets such as Korea, Japan, and Taiwan.

MICRO ROASTED EACH SUNDAY MORNING IN SMALL 22-POUND BATCHES: Soon, he invested in 3 Probat P12 high-tech digital roasting technologies from Probat Roasters, which offers the highest quality small-batch Coffee roasters. These machines allow him to roast small batches of each coffee we need for that day. The advantage is that we can roast as little as 18 pounds, yielding around 14 pounds of coffee per cycle. This means we will never roast more coffee than is needed to fill orders for the day. Giving you an incredibly fresh coffee roasted only after an order is placed. This means you will get the freshest coffee possible, still warm, as it is bagged and shipped to you while they are still warm from our roaster.

Every Sunday morning, we start roasting at 4:00 a.m. I light our Probat roasters to roast only the coffees ordered that same day. Yes, we take our coffee seriously, in fact, very seriously. Small-batch roasting is more expensive because it limits the amount of coffee we can roast in one day. Still, this roasting technique ensures that each batch of coffee Beans will be superior in quality and roasted evenly to the desired roast profile, not mass-produced. This process draws out the best possible flavor in each batch. Small batch roasting permits a higher quality of standards in coffee throughout the process, from choosing the correct charge & drop temperature to slowly roasting each small batch to perfection.

All Our Coffees Are Packaged in Bags That Are Nitrogen Flushed. Nitrogen is an odorless and tasteless gas that is heavier than oxygen. It is typically used in the food industry because it reduces the staling process. Since Nitwo has no smell or taste, it won't compromise the quality of the coffee taste but will ensurNitwon'teshness for an extended perwon'tWhen paired with our one-way values on our coffee bags, it will keep your coffee and roasted coffee fresh for months. This is a time-consuming process & adds to the cost of our coffee in both bags and labor, but we think it is worth it because most people only drink around a 1/2 to 3/4 of a pound of coffee a week.
