**Coffee Blend: 50% Caturra Arabica Beans and 50% Geisha Natural Beans**
**COFFEE**
At Finca Santa Teresa (FST), we take great pride in our coffee, crafting it with care and expertise. Between November and February, we handpick beans from 20 distinct lots across our farm, ensuring a diverse range of flavors. Following harvest, the coffee is thoughtfully processed using one of three methods: washed, honey, or natural. Depending on the approach, our beans dry on elevated timber beds, known as Camas Africanas, for as long as a month, enhancing their unique characteristics.
**GEISHA**
Just like the world of wine, coffee boasts a captivating variety of beans. Among these, Coffea Arabica includes impressive varietals such as Caturra, Catuai, Bourbon, Pacamara, and the illustrious Geisha. Imported to Panama from Ethiopia in the twentieth century to cultivate disease resistance, Geisha has thrived in our exceptional terroir, leading to a truly remarkable coffee. Its distinct profile has stolen the spotlight in international specialty competitions and graces the menus of the finest coffee shops and upscale dining venues around the globe.
**AFRICAN BEDS**
Camas Africanas are expertly designed raised timber drying beds that allow both honey and natural processed coffees to evolve their flavors. This intricate drying process can last anywhere from 10 days to a month, contributing to the coffee’s overall quality.
